Pecan Crunch Bars

Nuts, nuts, I’ve turned a bit nutty recently and have been surfing Pin Interest and Yummly for nutty nuggets of sweet stuff. I really do love a slice of pecan pie but it’s not easy to eat without cutlery so I was looking for something which could live in a cake tin and could be cut up small for repeat dipping. I found this on Just a Taste, a great website with some lovely treats.

The only adjustment I made was adding cinnamon to the base.

Pecan Crunch Bars

Biscuit base

  • 230g butter cubed
  • 135g light brown sugar
  • 400g plain flour
  • 1/2 tsp salt
  • 1 heaped tsp cinnamon

Toffee topping

  • 115g butter
  • 200g light brown sugar
  • 115g runny honey
  • 2 tbsp double cream
  • 330g pecan nuts

Pulse all the biscuit base ingredients in a food processor until all the lumps have been broken up and the mixture is crumble in apperance.  Push down flat into a lined 8″ x 12″ tin
