I’ve had a short break from my cakey blog to concentrate on surgery and now that’s over and I feel better I thought I’d start with something simple. Turns out this is a hit with children as the individual decoration really attracts them. Inspired by my eldest’s costa cake at the weekend – raspberry ripple cupcake. As he was eating it frantically he described it as a tasty cakey snack.
He’s just finished the home made version with the same enthusiasm.
I used the hummingbird bakery vanilla cupcake recipe and swirled seedless raspberry jam in the sponge. I then decorated with vanilla frosting and poured runny seedless raspberry jam over and a propped small flake in the frosting.
